I wish I hadn't read where cantonese chow mein comes from, 'cause I love it!!

MSG would be the last thing you want to put into stale food you want to serve or sell. MSG is a flavor enhancer and any stale food would taste even worse with the MSG in.
Steamed foods like DIM SUM can not be made with stale or low stale or lov quality foods. Cooking by steaming is one way to detmine if a food is stale or not. Other methods of cooking like frying or grilling will not reveal staleness as well as steaming.

Its just like the chicken places that serve hot chicken sandwiches, ( shredded chicken on bread with a sauce on top, it is called pulled chicken sandwiches in the states. ) They use the chicken that have been on the rotiserie the longest because it is too dried out to make the chicken sandwiches. The chicken may have been on the roaster longer but it is not rotten or stale. The the only ingriedients used in Chow Mien that may be older may be the roast BBQ pork. ( if you are lucky enough to get it, as some places do not include it in chow mein ) As far as the chicken, shrimps or vegetables. They all have to be fresh. If there is staleness in any food you will be able to taste it.

How about real chinesse food

These are all North American Chinesse dishes, some are Cantonese. Real Chineese diskes:

1. Shark fin soup.
2. Birds nest soup
3. The lobster at Casa Imperial (award winning).

Dim Sum-- shark dumplings(no shark meat)shrimp dumplings,pork dumplings,big beef ball,bbq pork/shrimp wrapped in rice flour(name cheung faan)black bean spare ribs with rice,egg roll(not spring rolls)sweet custard buns or bbq pork bun--after watching themurder from macau movie I'm still skeptical the buns arre made from restaurant owners innereds.
